A little (A LOT) late, but a how about a Thanksgiving post

As we all know, life gets a little busy. So, almost 3 weeks late, Thanksgiving!

Most dishes this year were Gluten Free (my mom is gluten intolerant), I decided on a baked tofu dish for myself and to try to recreate a favorite from my childhood, Cornbread Dressing (dressing is like stuffing, just cooked in a baking dish, or in this case a cast iron pan).

Gluten Free Cornbread Dressing (made with vegetable stock)

 Well, we all know what this is
There was also a lovely spinach salad with pomegranate, almonds and goat cheese dressing, roasted green beans and a few other family favorites. A thank  you to my parents for joining us, along with friends Zach and Sarah. 
I have so many posts ready to go, so expect another Thursday.
